  • 1.5 lbs boneless, skinless chicken breasts (2-3 large), sliced horizontally into ½-inch thick cutlets or pounded thin
  • 2 tbsp olive oil plus more if needed
  • 3 cloves garlic minced
  • 28 oz crushed tomatoes can
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp red pepper flakes (optional)
  • 4 oz fresh mozzarella sliced or shredded
  • ¼ cup grated Parmesan cheese plus more for serving
  • ¼ cup fresh basil or parsley chopped (for garnish)
  • Salt and black pepper to taste

  • If chicken breasts are thick, slice or pound them to ½-inch thickness and season with salt and pepper.
  • Heat olive oil in an oven-safe skillet over medium-high heat, sear chicken for 3-4 minutes per side until golden brown, then remove and set aside.
  • Reduce heat to medium, add more olive oil if needed, and sauté minced garlic for about 30 seconds until fragrant.
  • Pour in crushed tomatoes, stir in oregano, basil, and red pepper flakes (if using), season, and bring the sauce to a gentle simmer.
  • Nestle the seared chicken back into the simmering sauce, cover, and simmer on low for 10-15 minutes until chicken is cooked through (165°F/74°C).
  • Uncover the skillet, arrange mozzarella slices over the chicken, and sprinkle with Parmesan cheese.
  • Melt the cheese by either covering the skillet and simmering for 3-5 minutes on low, or placing it under a preheated broiler for 2-4 minutes until bubbly and lightly golden.
  • Remove from heat, garnish with fresh basil or parsley, and serve immediately.
