Toast the bread until golden brown.
Whisk eggs with salt and pepper in a bowl.
Heat a non-stick pan over medium heat and add butter or oil.
Pour in eggs, let sit briefly, then gently push cooked edges to the center, tilting the pan.
Remove eggs from heat when mostly set but still moist.
Top the hot toast with scrambled eggs and sprinkle with cheese to melt.
