  • 1 lb lean ground turkey
  • 1 medium yellow onion
  • 2-3 garlic cloves
  • 1 bell pepper
  • 1 (14.5-ounce) can canned diced tomatoes undrained
  • 1/2 cup chicken broth low sodium
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • salt to taste (start with 1/2 teaspoon)
  • black pepper to taste (start with 1/4 teaspoon)
  • 1 tablespoon olive oil

Optional for Serving

  • cooked rice, pasta, or quinoa

Preparation

  • Dice the onion and bell pepper, then mince the garlic.

Cooking

  • Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until no longer pink, then drain excess fat.
  • Add diced onion and bell pepper to the skillet with the turkey. Cook for 5-7 minutes until softened, then stir in minced garlic and cook for another minute until fragrant.
  • Pour in diced tomatoes and chicken broth; stir in Worcestershire sauce and Italian seasoning. Bring to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes to meld flavors.
  • Taste and adjust seasoning with salt and pepper as needed. Serve hot, optionally over rice, pasta, or quinoa.

Notes

For a spicier kick, add a pinch of red pepper flakes with the Italian seasoning. To make this meal lower carb, serve it with cauliflower rice or zoodles.
