  • 1 tablespoon olive oil
  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can corn, drained
  • 1 (10-ounce) can diced tomatoes with green chilies (e.g., Rotel)
  • 1 (1.25-ounce) packet taco seasoning (or 2 tablespoons homemade blend)
  • 4 cups chicken broth

For Garnish (Optional)

  • 1/2 cup chopped fresh cilantro

  • Heat the olive oil in a large skillet over medium-high heat. Sear the chicken pieces for 2-3 minutes per side until lightly browned to add flavor.
  • Transfer the seared chicken and all other main ingredients (onion, garlic, beans, corn, tomatoes, taco seasoning, and chicken broth) to your slow cooker.
  • Stir all ingredients together, then cover the slow cooker and cook on high for 1 hour, or until the chicken is tender.
  • Optionally, remove and shred the cooked chicken with two forks, then return it to the soup.
  • Ladle the hot soup into bowls and garnish with fresh cilantro or any desired toppings.

Notes

For a spicier kick, add a pinch of cayenne pepper with the taco seasoning. This soup freezes well for future meals.
