  • 2 large eggs
  • 1 tbsp milk
  • 1 cup fresh spinach
  • 2 tbsp crumbled feta cheese
  • Salt and black pepper to taste
  • 1 tsp olive oil or butter
  • red pepper flakes Optional: a sprinkle of red pepper flakes for a kick

Cooking Steps

  • Whisk together eggs, milk, salt, and pepper in a medium bowl until well combined.
  • Heat olive oil or butter in a non-stick skillet over medium heat.
  • Sauté the chopped spinach in the skillet for 1-2 minutes, until it wilts.
  • Pour the egg mixture over the wilted spinach.
  • As eggs set, gently push the cooked egg from the edges toward the center, allowing uncooked egg to flow underneath.
  • Continue cooking and stirring until eggs are mostly set but still slightly moist.
  • Stir in feta cheese and red pepper flakes (if using) and cook for 30 seconds until feta is warmed.
  • Remove from heat and serve immediately.

Notes

For an extra fluffy scramble, add a pinch of baking powder to the egg mixture. Serve with a side of toast or fresh fruit for a complete meal.
