Preparation
Gather all ingredients: eggs, spinach, feta, olive oil/butter, salt, and pepper.
Heat a non-stick skillet over medium heat and add olive oil or butter to melt.
Cooking the Scramble
Whisk eggs lightly with a fork in a small bowl with salt and pepper until just combined.
Pour whisked eggs into the heated skillet and cook undisturbed for 30 seconds until edges set.
Gently push cooked egg portions to the center with a spatula, allowing uncooked egg to flow underneath.
Once eggs are mostly set but moist, add chopped spinach and feta cheese; cook for 30-60 seconds, folding until spinach wilts and feta warms.
Remove the scramble from heat immediately to avoid overcooking and keep it soft and creamy.
Serving
Serve hot, optionally with whole-wheat toast and a dash of hot sauce.
Notes
Be careful not to overcook the eggs; they should still be soft and creamy for the best texture.
