  • 2 large eggs
  • 1/4 cup fresh spinach chopped
  • 2 tablespoons crumbled feta cheese
  • 1 teaspoon olive oil or butter
  • Salt to taste
  • freshly ground black pepper to taste

Optional Additions

  • 1 slice whole-wheat toast
  • Dash hot sauce

Preparation

  • Gather all ingredients: eggs, spinach, feta, olive oil/butter, salt, and pepper.
  • Heat a non-stick skillet over medium heat and add olive oil or butter to melt.

Cooking the Scramble

  • Whisk eggs lightly with a fork in a small bowl with salt and pepper until just combined.
  • Pour whisked eggs into the heated skillet and cook undisturbed for 30 seconds until edges set.
  • Gently push cooked egg portions to the center with a spatula, allowing uncooked egg to flow underneath.
  • Once eggs are mostly set but moist, add chopped spinach and feta cheese; cook for 30-60 seconds, folding until spinach wilts and feta warms.
  • Remove the scramble from heat immediately to avoid overcooking and keep it soft and creamy.

Serving

  • Serve hot, optionally with whole-wheat toast and a dash of hot sauce.

Notes

Be careful not to overcook the eggs; they should still be soft and creamy for the best texture.
