Preparation

  • Begin by toasting the whole-grain bread slice.
  • While the bread is toasting, heat a small non-stick pan over medium heat.
  • Crack two eggs into a bowl, season with salt and pepper, and whisk until well combined.
  • Pour the whisked eggs into the hot pan; as they start to set, add the fresh spinach.
  • Gently scramble the eggs, allowing the spinach to wilt, then stir in the crumbled feta cheese just before the eggs are fully cooked.
  • Once the toast is ready, you can lightly drizzle it with olive oil if desired, then top it with the halved cherry tomatoes.
  • Finally, serve the hot spinach and feta scramble alongside the prepared tomato toast.

Notes

For extra flavor, you can add a pinch of garlic powder to the eggs or a sprinkle of fresh herbs on the finished dish.
