  • 1 pound Ground Turkey lean or extra lean
  • 1 tablespoon Olive Oil
  • 1 medium Onion chopped
  • 2-3 cloves Garlic minced
  • 1 large Bell Pepper red for sweetness, chopped
  • 1 medium Zucchini or Yellow Squash diced
  • 1 can Diced Tomatoes 14.5 ounce, undrained, fire-roasted recommended
  • 2 tablespoons Tomato Paste
  • 1/2 cup Chicken or Vegetable Broth
  • 1 teaspoon Italian Seasoning
  • 1/2 teaspoon Smoked Paprika
  • Salt and Black Pepper To taste
  • Fresh Parsley or Cilantro For garnish, optional
  • 1/4 teaspoon Red Pepper Flakes for a spicier kick, optional
  • 1/2 cup Shredded Mozzarella or Parmesan Cheese for cheesy goodness, optional

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat.
  • Add ground turkey to the skillet, break it up, and cook until fully browned (5-7 minutes); drain excess fat.
  • Sauté chopped onion and minced garlic with the turkey for 3-4 minutes until softened, then add bell pepper and zucchini/squash and cook for another 5-7 minutes until vegetables begin to soften.
  • Stir in diced tomatoes, tomato paste, broth, Italian seasoning, smoked paprika, and red pepper flakes (if using); combine well.
  • Bring to a simmer, then reduce heat to medium-low, cover, and cook for 10-15 minutes until vegetables are tender and sauce thickens.
  • Season with salt and pepper. Optionally, stir in shredded mozzarella or Parmesan cheese until melted and garnish with fresh parsley or cilantro. Serve hot.

Notes

For a spicier dish, increase the amount of red pepper flakes or add a pinch of cayenne pepper. This dish pairs well with a side of crusty bread or a light salad.
