Speedy Weeknight Potsticker Stir Fry

This speedy weeknight potsticker stir fry combines frozen potstickers with fresh vegetables and a savory sauce for a quick and satisfying meal that is perfect for busy evenings.

Ingredients
  

For the Stir Fry:

  • 1 tablespoon sesame oil
  • 1 package frozen potstickers (10-12 ounce)
  • 1 cup broccoli florets cut small
  • 1 red bell pepper thinly sliced
  • 1 cup snap peas
  • 2 green onions sliced (white and green parts separated)
  • 1 tablespoon minced fresh ginger (or 1 teaspoon ground ginger)
  • 2 garlic cloves, minced
  • 1/2 cup shredded carrots (optional, but adds color and sweetness)

For the Sauce:

  • 1/4 cup soy sauce (low-sodium preferred)
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon cornstarch
  • 1/2 teaspoon sriracha (or to taste, for a little kick)
  • 1/4 cup chicken or vegetable broth

Instructions
 

Prepare the Sauce

  • In a small bowl, whisk together soy sauce, rice vinegar, honey/maple syrup, cornstarch, sriracha, and broth until smooth. Set the sauce aside.

Cook the Potstickers

  • Heat sesame oil in a large skillet or wok over medium-high heat. Add frozen potstickers in a single layer and cook for 3-4 minutes until golden brown and crispy on the bottom. Flip and cook for another 2-3 minutes until browned and cooked through, then remove and set aside.

Sauté the Aromatics and Vegetables

  • Add a bit more oil if needed, then sauté the white parts of green onions, minced ginger, and minced garlic for about 30 seconds until fragrant.
  • Add broccoli florets, red bell pepper, snap peas, and shredded carrots to the pan. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.

Combine and Sauce

  • Return the cooked potstickers to the pan with the vegetables. Whisk the prepared sauce again and pour it over everything.
  • Stir gently to coat all ingredients and simmer for 1-2 minutes until the sauce thickens and clings. Garnish with the green parts of the green onions and serve immediately.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the stir fry with the aromatics. Adjust the amount of sriracha in the sauce to your preferred spice level. If you don't have fresh ginger, ground ginger works well, but reduce the amount as it's more potent. This dish is excellent served over a bed of steamed rice or noodles for a more substantial meal.
