Spiced Apple & Pecan Cinnamon Roll Cobbler

Ingredients
  

For the Apple Filling:

  • 6-8 medium apples (Granny Smith, Honeycrisp, Fuji), peeled, cored, and sliced
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • Pinch allspice
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter cut into small pieces
  • 1/2 cup chopped pecans

For the Cinnamon Roll Topping:

  • 1 can refrigerated cinnamon roll dough (8-count, standard size)
  • 1 tablespoon melted butter
  • 1/4 teaspoon ground cinnamon extra, for sprinkling
  • 1 tablespoon brown sugar extra, for sprinkling
  • 1/4 cup chopped walnuts

For the Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • In a large bowl, combine the sliced apples with both sugars, lemon juice, cinnamon, nutmeg, allspice, cornstarch, and vanilla extract; then stir in the chopped pecans.
  • Pour the apple mixture into the prepared baking dish and dot the top with small pieces of butter.

Topping & Baking

  • Separate the refrigerated cinnamon rolls and cut each into quarters, setting aside any included icing.
  • Evenly spread the cinnamon roll quarters over the apple filling in the baking dish.
  • Brush the cinnamon roll pieces with melted butter, then sprinkle with extra cinnamon, brown sugar, and chopped walnuts.
  • Bake for 35-45 minutes until the apples are tender and bubbly and the topping is golden brown; if it browns too quickly, loosely cover the dish with aluminum foil.

Glazing & Serving

  • Remove the cobbler from the oven and allow it to cool for 10-15 minutes before applying the glaze.
  • While the cobbler cools, whisk together the powdered sugar, milk or cream, and vanilla extract in a small bowl until the glaze is smooth and has a drizzling consistency.
  • Drizzle the prepared glaze generously over the warm cobbler and serve immediately, perhaps with vanilla ice cream or whipped cream.

Notes

For best results, choose firm baking apples. If the cinnamon roll topping begins to brown too quickly during baking, loosely cover the dish with aluminum foil. Serve this warm cobbler with a scoop of vanilla bean ice cream or a dollop of whipped cream for an extra treat.
