Chicken

  • 1.5 - 2 lbs boneless, skinless chicken breasts or thighs

Sauce

  • 1/2 cup Honey
  • 1/4 cup Soy Sauce (low sodium preferred)
  • 4-5 cloves Garlic minced
  • 1-2 tbsp Sriracha or Chili Garlic Sauce (adjust to desired spice level)
  • 1 tbsp Rice Vinegar
  • 1 tbsp Brown Sugar (optional, for extra sweetness)
  • 1 tbsp Cornstarch mixed with 2 tbsp cold water (for thickening, optional)

  • Green Onions Chopped, (optional)

Cooking Instructions

  • Place the chicken breasts or thighs evenly at the bottom of your slow cooker.
  • In a medium bowl, whisk together honey, soy sauce, minced garlic, sriracha or chili garlic sauce, rice vinegar, and optional brown sugar until well combined, then pour over the chicken.
  • Cover and cook on LOW for 3-4 hours (breasts) or 4-6 hours (thighs), or on HIGH for 2-3 hours (breasts) or 3-4 hours (thighs), until the chicken reaches 165°F (74°C).
  • To thicken the sauce, remove the chicken, whisk the cornstarch slurry into the sauce in the slow cooker, and cook on HIGH for another 15-30 minutes, stirring occasionally.
  • Shred the cooked chicken in the slow cooker or on a cutting board, then return it to the pot and stir to coat thoroughly with the thickened sauce.
  • Serve hot, garnished with optional sesame seeds and chopped green onions.

Notes

For best flavor, marinate the chicken in the sauce in the refrigerator for at least 30 minutes before slow cooking. Adjust the amount of sriracha or chili garlic sauce to your personal spice preference. This chicken is delicious served over rice, with noodles, or as a filling for wraps.
