Spicy BBQ Chicken Quesadilla Dinner

  • 2 cups Cooked Chicken shredded
  • 8 medium Tortillas (8-10 inch) flour tortillas
  • 2 cups Cheese shredded Monterey Jack and Cheddar blend
  • 2 tablespoons Oil or Butter for frying

Flavor Boost

  • 2 tbsp BBQ Sauce (your favorite!)
  • pinch Cayenne Pepper

Instructions
 

Preparation

  • In a medium bowl, combine the shredded cooked chicken with 2 tablespoons of BBQ sauce and a pinch of cayenne pepper.
  • Mix well to ensure the chicken is evenly coated.

Cooking

  • Place a large non-stick skillet or griddle over medium heat and add about 1 teaspoon of oil or a pat of butter.
  • Lay one tortilla in the warm pan and sprinkle about a quarter cup of cheese over one half of the tortilla.
  • Spoon about a quarter of the seasoned chicken mixture evenly over the cheese on that same half, then top with another quarter cup of cheese.
  • Once the cheese on the bottom starts to melt and the tortilla begins to brown slightly (about 2-3 minutes), carefully fold the empty half of the tortilla over the filled half.
  • Cook for another 2-3 minutes until golden brown and crispy, then gently flip and cook the other side until golden and the cheese is fully melted.
  • Transfer the cooked quesadilla to a cutting board and repeat with the remaining tortillas, chicken, and cheese, adding more oil or butter to the pan as needed.
  • Cut each quesadilla into wedges and serve immediately with your favorite toppings like sour cream, salsa, or hot sauce.

Notes

For extra spice, add more cayenne pepper or a dash of hot sauce to the chicken mixture. You can also experiment with different types of cheese or add a layer of refried beans for a heartier meal.
