Spicy Garlic Ginger Ground Turkey Stir Fry

Main Ingredients

  • 1 pound Ground Turkey lean (93/7)
  • 2 cups Broccoli florets
  • 1 Bell peppers large (any color), sliced
  • 1 cup Carrots thinly sliced or julienned
  • 1 cup Snap peas
  • 1 cup Mushrooms sliced
  • 1/2 Onion medium, chopped
  • 4 Garlic cloves, minced
  • 1 tablespoon Fresh Ginger grated
  • 1-2 tablespoons Olive Oil

Sauce Ingredients

  • 1/4 cup Soy Sauce (or Tamari)
  • 1/4 cup Chicken Broth
  • 2 tablespoons Honey
  • 1 tablespoon Rice Vinegar
  • 1 tablespoon Cornstarch
  • 1 teaspoon Sriracha (or more, to taste)

Garnish

  • 1 tablespoon Toasted sesame seeds for garnish
  • 2 tablespoons Green onions chopped, for garnish

Instructions
 

Preparation

  • Chop all vegetables, mince garlic, and grate ginger. In a small bowl, whisk together soy sauce, broth, honey, rice vinegar, cornstarch, and Sriracha until smooth.

Cooking

  • Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add ground turkey and cook until browned, then drain excess grease.

Sauté

  • Add the remaining olive oil to the skillet, then stir-fry minced garlic and grated ginger for 30 seconds. Add carrots and broccoli, stir-frying for 2-3 minutes, then add bell peppers, snap peas, mushrooms, and onion, and continue stir-frying for 3-5 minutes until tender-crisp.

Combine and Serve

  • Return the cooked ground turkey to the skillet with the vegetables. Stir the sauce mixture and pour it over the turkey and vegetables, then stir everything together and simmer for 1-2 minutes until the sauce thickens.
  • Remove from heat, garnish with toasted sesame seeds and chopped green onions, and serve hot.

Notes

Serve this stir fry over rice, cauliflower rice, or noodles for a complete meal. Adjust the Sriracha amount to your preferred spice level.
