Spicy Garlic Shrimp with Rainbow Steamed Vegetables

  • 1 pound medium-large shrimp, peeled and deveined
  • 4-6 cups assorted vegetables (e.g., broccoli florets, sliced carrots, snap peas, red bell pepper, zucchini rounds)
  • 2-3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dark sesame oil
  • 1/2 teaspoon red pepper flakes (or more, to taste)
  • 2 tablespoons chopped fresh cilantro
  • Salt and black pepper to taste

Preparation

  • Wash and chop all chosen vegetables into bite-sized pieces for even cooking, aiming for similar sizes.
  • Bring an inch of water to a boil in a large pot with a steamer basket. Steam harder vegetables for 3-4 minutes, then add softer vegetables and continue steaming for another 3-5 minutes until tender-crisp.
  • Pat shrimp dry and toss them in a medium bowl with 1 tablespoon olive oil, minced garlic, grated ginger, red pepper flakes, salt, and pepper.
  • Heat the remaining 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Cook seasoned shrimp in a single layer for 1-2 minutes per side until pink and opaque.
  • While shrimp cook, whisk together soy sauce, lemon juice, and sesame oil in a small bowl.
  • Transfer cooked shrimp and steamed vegetables to a large serving bowl. Drizzle with the prepared sauce, toss gently, and garnish with fresh cilantro before serving immediately.

Notes

Adjust red pepper flakes to your preferred spice level. Ensure vegetables are not overcooked to maintain their vibrant color and texture.
