  • 2.5 lbs chuck roast cut into 2 large pieces
  • 1-2 jalapeños sliced, seeds removed for less heat
  • 1 small diced onion
  • 4 cloves minced garlic
  • 1/2 cup beef broth
  • 1/4 cup lime juice
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

For Serving

  • sour cream
  • fresh pico de gallo
  • lime wedges

Instructions

  • Place the chuck roast in the crockpot.
  • Add jalapeños, onion, garlic, beef broth, lime juice, and all spices to the crockpot with the beef.
  • Cover and cook on low for 8-10 hours or high for 4-6 hours until the beef is easily shredded.
  • Remove and shred the beef with two forks, then return it to the crockpot with the cooking liquid.
  • Serve the beef in tortillas with sour cream, pico de gallo, and fresh lime juice.

Notes

Adjust jalapeño quantity based on desired heat level. For extra flavor, sear the chuck roast before placing it in the crockpot.
