Spicy Jalapeño Popper Cheeseburger Eggrolls

These crispy eggrolls are filled with a delicious blend of seasoned ground beef, melted cheddar and cream cheese, and spicy jalapeños, creating a fun and flavorful appetizer or meal.

Ingredients
  

Eggroll Filling

  • 1 lb ground beef (80/20 lean)
  • 1/2 onion, finely chopped
  • 1-2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/4 cup finely diced pickled jalapeños
  • 2 oz cream cheese, softened

Assembly and Cooking

  • 12-16 eggroll wrappers
  • Oil for frying (vegetable, canola, or peanut oil) OR cooking spray for baking/air frying
  • Buttermilk ranch dressing For dipping

Instructions
 

Prepare the Filling

  • In a large skillet, brown the ground beef over medium heat, then drain any excess grease.
  • Add the chopped onion and cook until softened, then stir in the minced garlic and cook until fragrant.
  • Mix in Worcestershire sauce, salt, and pepper, then remove the skillet from heat.
  • Fold in cheddar cheese, diced jalapeños, and softened cream cheese until combined; allow the mixture to cool slightly.

Assemble the Eggrolls

  • Lay an eggroll wrapper diagonally and place 2-3 tablespoons of filling in the center, forming a log.
  • Fold the bottom corner over the filling, then fold in the side corners.
  • Roll the eggroll tightly from the bottom up, dampening the top corner with water to seal it.
  • Repeat this process for the remaining eggrolls until all filling is used.

Cook the Eggrolls

  • To fry: Heat oil to 350°F (175°C) and fry 3-4 eggrolls for 3-5 minutes until golden brown and crispy, then drain on paper towels.
  • To bake: Preheat oven to 400°F (200°C), spray eggrolls with cooking spray, and bake for 15-20 minutes, flipping halfway.
  • To air fry: Preheat air fryer to 375°F (190°C), spray eggrolls with cooking spray, and cook for 8-12 minutes, flipping halfway.
  • Serve the hot eggrolls with buttermilk ranch dressing for dipping.

Notes

For extra spice, you can add a pinch of cayenne pepper to the beef filling. Ensure the cream cheese is softened to prevent lumps in the filling. If baking or air frying, don't overcrowd the tray/basket to allow for even crisping. These eggrolls are best served immediately for optimal crispness.
