  • 2 cups Cooked Chicken shredded (from leftover rotisserie chicken or quickly cooked chicken breasts)
  • 6-8 medium to large Flour Tortillas
  • 1.5 cups Shredded Cheese Monterey Jack or a Mexican blend recommended
  • 1-2 tablespoons Taco Seasoning to taste
  • 2 tablespoons Salsa plus more for serving
  • 1-2 tablespoons Diced Jalapeños canned or fresh, optional, for extra kick
  • Salt and Pepper to taste

  • If using uncooked chicken, season 1-2 chicken breasts with salt, pepper, and garlic powder, then cook in a skillet until thoroughly cooked and shred.
  • In a bowl, combine the shredded chicken, shredded cheese, taco seasoning, and 2 tablespoons of salsa; optionally add diced jalapeños for a spicy kick and mix well.
  • Warm tortillas individually in a dry skillet for 15-20 seconds per side, or microwave for 15-30 seconds, to make them pliable.
  • Lay a warmed tortilla flat and spoon a generous amount of the chicken and cheese mixture onto the center, leaving space around the edges.
  • Fold in the opposite sides of the tortilla, then tightly roll it up from the bottom; for a crispy exterior, lightly brush the outside with oil before grilling.
  • Place the rolled wraps in a hot skillet or griddle and grill for 2-3 minutes per side until golden brown and the cheese is oozing.
  • Slice the wraps in half if desired and serve immediately with your favorite toppings like guacamole, sour cream, or extra salsa.

Notes

For an even quicker meal, use pre-cooked rotisserie chicken. Adjust the amount of taco seasoning and jalapeños to your preferred spice level. These wraps are fantastic for meal prep as well; prepare the filling ahead of time and assemble when ready to eat.
