Sweet & Smoky One Pan Maple Salmon & Veggies

Ingredients
  

For the Salmon & Veggies:

  • 4 (6 oz) salmon fillets skin on or off
  • 1 head of broccoli cut into florets
  • 2 bell peppers any color, chopped into 1-inch pieces
  • 1 red onion cut into wedges
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper to taste

For the Maple Glaze:

  • 1/4 cup pure maple syrup dark robust flavor is best!
  • 2 tbsp Dijon mustard
  • 1 tbsp soy sauce or tamari for gluten-free
  • 1 clove garlic minced
  • 1/2 tsp smoked paprika optional, but highly recommended for depth

Instructions
 

Preheat Oven & Prep Pan

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.

Prepare Veggies

  • Combine broccoli, bell peppers, and red onion in a bowl; drizzle with olive oil, salt, and pepper, then toss to coat. Spread the vegetables in a single layer on one half of the baking sheet.

Make the Glaze

  • Whisk together maple syrup, Dijon mustard, soy sauce, minced garlic, and smoked paprika in a small bowl until well combined.

Glaze Salmon

  • Pat salmon fillets dry, place them on the other half of the baking sheet, and brush about half of the maple glaze generously over each fillet.

Bake

  • Bake for 12-15 minutes at 400°F (200°C), or until salmon is cooked through and flakes easily, and vegetables are tender-crisp.

Final Glaze & Serve

  • During the last 2-3 minutes of baking, brush remaining glaze over the salmon, and for a more caramelized finish, briefly broil for the last minute, watching carefully to prevent burning; serve immediately.

Notes

For extra flavor, marinate the salmon in the glaze for at least 15 minutes before baking. Adjust cooking times based on the thickness of your salmon and your oven's performance. You can also customize the vegetables to your liking with asparagus, snap peas, or zucchini.
