  • 2-3 lbs boneless, skinless chicken breasts or thighs
  • 1 onion, chopped
  • 3-4 cloves garlic, minced
  • 18 oz bottle BBQ sauce
  • 1/4 cup apple cider vinegar
  • 2 tbsp brown sugar optional, for extra sweetness
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Cooking Steps

  • Pat the chicken dry with paper towels and season lightly with salt and pepper.
  • Spread the chopped onion and minced garlic evenly across the bottom of the slow cooker.
  • Whisk together the BBQ sauce, apple cider vinegar, brown sugar (if using), and smoked paprika in a medium bowl.
  • Place the seasoned chicken on top of the onions and garlic, then pour the BBQ sauce mixture over the chicken.
  • Cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
  • Shred the chicken directly in the slow cooker with two forks and stir it into the warm BBQ sauce.

Notes

For an extra kick, add a pinch of cayenne pepper to the BBQ sauce mixture. Serve on buns with coleslaw for a complete meal.
