Tangy BBQ Ranch Chicken

Ingredients
  

Main Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup BBQ sauce
  • 1/2 cup chicken broth
  • 1 large onion
  • 2 cups baby carrots
  • 1 can (15 oz) black beans, rinsed and drained
  • 1/2 cup frozen corn

Preparation

  • Chop the onion and rinse and drain the black beans before starting.

Combine Ingredients

  • Place chicken in the crockpot, then layer the chopped onion and baby carrots around it. Scatter the rinsed black beans and frozen corn over the top.

Add Sauce

  • Whisk together the ranch seasoning mix, BBQ sauce, and chicken broth in a separate bowl. Pour this mixture evenly over all ingredients in the crockpot.

Cook

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and easily shredded.

Serve

  • Shred the chicken directly in the crockpot with two forks. Stir everything together to combine flavors and serve warm.

Notes

For best results, allow enough time for the chicken to cook slowly on low heat to maximize tenderness and flavor absorption.
