Ingredients
  

Sausage Mixture

  • 1 lb breakfast sausage
  • 1/2 cup onion chopped
  • 1/2 cup green bell pepper chopped

Egg Mixture

  • 10 large eggs
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups shredded cheddar cheese

Topping

  • 32 ounces frozen tater tots
  • 1 cup shredded cheddar cheese

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  • In a large skillet, cook the sausage, onion, and bell pepper over medium heat until the sausage is browned and vegetables are tender. Drain any excess grease.
  • In a large bowl, whisk together the eggs, milk, salt, and pepper. Stir in 2 cups of shredded cheddar cheese.
  • Spread the sausage mixture evenly in the prepared baking dish. Pour the egg mixture over the sausage mixture.

Baking

  • Arrange a single layer of frozen tater tots over the egg mixture. Sprinkle with the remaining 1 cup of shredded cheddar cheese.
  • Bake for 45-50 minutes, or until the eggs are set and the tater tots are golden brown. If the top browns too quickly, you can cover it loosely with foil.
  • Let the casserole rest for 5-10 minutes before serving.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the sausage mixture. This casserole can be assembled the night before and baked in the morning. Simply cover and refrigerate, then add about 10-15 minutes to the baking time.
