Tex-Mex Ground Beef Stuffed Peppers

  • 4-6 large Bell Peppers
  • 1 lb Ground Beef
  • 1 cup Cooked Rice
  • 1 can Canned Black Beans rinsed and drained
  • 1 can Canned Corn drained
  • 1/2 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 2 tbsp Taco Seasoning
  • 1/2 cup Salsa mild or medium
  • Salt and Pepper To taste
  • 1 cup Shredded Cheese Monterey Jack or Mexican blend, for mixing in and topping
  • Cilantro Fresh, chopped (for garnish, optional)

Instructions
 

Preparation

  • Wash bell peppers, slice off tops, remove seeds and membranes. Trim bottoms for stability if needed.
  • In a large skillet, brown ground beef, drain grease, then sauté chopped onion for 5 minutes. Stir in minced garlic and cook for 1 minute.
  • Mix in cooked rice, black beans, corn, taco seasoning, salsa, and half of the shredded cheese, seasoning with salt and pepper; cook 2-3 minutes.
  • Preheat oven to 375°F (190°C). Grease a baking dish, stuff peppers with filling, top with remaining cheese, and add 1/2 cup water or broth to the dish. Cover with foil.
  • Bake for 35-40 minutes with foil, then remove foil and bake for another 10-15 minutes until peppers are tender and cheese is golden.
  • Garnish with fresh chopped cilantro, if desired.

Notes

For a spicier kick, add a pinch of cayenne pepper to the filling or use a hot salsa.
