  • 2-3 large eggs
  • 3 slices streaky bacon
  • 2 slices whole-wheat bread
  • 1/2 avocado
  • 1/4 cup mixed fresh berries (strawberries, blueberries)
  • 1 tablespoon butter
  • Salt and black pepper to taste
  • Pinch chili flakes (optional)

  • Fresh orange juice

Cooking Instructions

  • Cook bacon in a cold pan over medium heat until crispy, or bake in a 400°F (200°C) oven for 15-20 minutes.
  • Drain the cooked bacon on paper towels to remove excess fat.
  • Toast the whole-wheat bread slices while the bacon is cooking.
  • Melt butter in a non-stick pan over medium heat, then fry 2-3 eggs to your preference.
  • Season the fried eggs with salt and black pepper.
  • Mash half an avocado onto one slice of toast, seasoning with salt and optional chili flakes.
  • Arrange the cooked eggs, crispy bacon, avocado toast, and fresh mixed berries on a plate.
  • Serve immediately with a glass of fresh orange juice.

Notes

For extra flavor, sprinkle a little nutritional yeast on your avocado toast. Adjust seasoning to your taste, and feel free to add a side of your favorite hot sauce to the eggs for a kick.
