Preparation

  • Preheat oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them or lining with parchment paper.
  • In a large bowl, whisk together the dry ingredients: all-purpose flour, granulated sugar, unsweetened cocoa powder, baking soda, baking powder, and salt until well combined and lump-free.
  • In a separate medium bowl, whisk together the wet ingredients: eggs, milk, vegetable oil, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
  • Carefully pour hot coffee or hot water into the batter and stir until just combined and smooth; the batter will be thin.
  • Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Allow the cakes to cool in their pans for 10-15 minutes before transferring them to a wire rack to cool completely before frosting.

Notes

The hot coffee is crucial for blooming the cocoa and adding moisture, but it won't make your cake taste like coffee. Ensure cakes are completely cool before frosting to prevent melting.
