  • 2 packs ramen noodles
  • 4 cups vegetable broth
  • 2 tbsp soy sauce
  • 1 inch ginger grated
  • 2 cloves garlic minced
  • 1 cup mushrooms sliced
  • 2 cups spinach
  • 6 pieces dumplings frozen or fresh

  • In a large pot, bring the vegetable broth to a simmer.
  • Add soy sauce, grated ginger, and minced garlic to the broth. Let it simmer for 5 minutes.
  • Add sliced mushrooms and dumplings to the pot and cook until the dumplings are heated through.
  • Add ramen noodles and cook according to package directions, usually 3-5 minutes.
  • Stir in the fresh spinach and cook until wilted. Serve hot.

Notes

Feel free to add other vegetables like carrots or bok choy. A soft-boiled egg also makes a great addition!
