Instructions
In a large pot, bring the vegetable broth to a simmer.
Add soy sauce, grated ginger, and minced garlic to the broth. Let it simmer for 5 minutes.
Add sliced mushrooms and dumplings to the pot and cook until the dumplings are heated through.
Add ramen noodles and cook according to package directions, usually 3-5 minutes.
Stir in the fresh spinach and cook until wilted. Serve hot.
Notes
Feel free to add other vegetables like carrots or bok choy. A soft-boiled egg also makes a great addition!
