Ingredients
  

For the Cookies

  • 180 g all-purpose flour
  • 2 tablespoons instant espresso powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 115 g unsalted butter (softened to room temperature)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract

For the Mascarpone Cream

  • 200 g mascarpone cheese
  • 100 g whipping cream
  • 50 g powdered sugar
  • 1/2 teaspoon vanilla extract

For Dusting

  • 2 tablespoons cocoa powder for dusting

Instructions
 

Cookies

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix together the all-purpose flour, instant espresso powder, baking powder, baking soda, and salt. Set this mixture aside.
  • In another large bowl, beat together the softened butter, granulated sugar, and brown sugar until smooth and creamy.
  • Add the egg and vanilla extract to the butter mixture, and mix until well combined.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  • Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper. Bake for about 10–12 minutes or until the edges are golden brown.
  • Remove the cookies from the oven and let them cool completely.

Mascarpone Cream

  • In a mixing bowl, combine the mascarpone cheese, whipping cream, powdered sugar, and vanilla extract. Beat until the mixture is smooth and fluffy.
  • Once the cookies are completely cooled, spread a generous dollop of the mascarpone cream on the flat side of half of the cookies.
  • Top each of these with the remaining cookies to make sandwiches.

Dusting

  • Sift cocoa powder over the top of each cookie sandwich for an extra special touch.

Notes

Store your Tiramisu Cookies in an airtight container to keep them fresh. They can be stored at room temperature for up to 3 days or in the refrigerator for up to a week. For best flavor and texture, eat them within a few days. If desired, you can add chocolate chips or nuts to the cookie dough for added texture.
