Ingredients
  

For the Coconut Sugar Cookie Crust:

  • 1 roll refrigerated sugar cookie dough (16.5 oz)
  • 1/4 cup shredded sweetened coconut

For the Coconut Cream Cheese Frosting:

  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 1 teaspoon coconut extract
  • 3 cups powdered sugar sifted

Assorted Toppings:

  • 1 cup fresh pineapple diced
  • 1 large mango peeled and diced
  • 1/2 cup shredded sweetened coconut toasted (optional, for garnish)

Instructions
 

Prepare the Coconut Crust

  • Preheat oven to 350°F (175°C) and lightly grease a 12-inch pizza pan or baking sheet. Combine sugar cookie dough with 1/4 cup shredded sweetened coconut and press evenly onto the pan to form a crust.

Bake the Crust

  • Bake for 12-18 minutes until golden brown, then cool completely on a wire rack to prevent frosting from melting.

Make the Coconut Cream Cheese Frosting

  • While the crust cools, beat softened cream cheese and butter until smooth. Add coconut extract and gradually mix in sifted powdered sugar until light and fluffy.

Assemble the Pizza

  • Once the crust is completely cool, spread the coconut cream cheese frosting evenly over the surface, optionally leaving a small border.

Decorate and Serve

  • Artfully arrange diced pineapple and mango over the frosting, sprinkling with toasted coconut if desired. Slice and serve immediately.

Notes

For an extra tropical twist, add a squeeze of lime juice to the frosting. Ensure the crust is fully cooled before frosting to avoid a melted mess! This dessert is best served fresh; store any leftovers in the refrigerator.
