  • 1 lb ground turkey
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) pumpkin puree
  • 1 cup chicken broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 can (15 oz) kidney beans rinsed and drained
  • 1 cup corn frozen or canned, drained

  • In a large pot or Dutch oven, brown the ground turkey over medium heat; drain any excess fat.
  • Add the chopped onion and minced garlic to the pot, cooking until softened, about 5-7 minutes.
  • Stir in the diced tomatoes, pumpkin puree, chicken broth, chili powder, cumin, smoked paprika, salt, and pepper.
  • Bring the mixture to a simmer, then reduce heat, cover, and let it cook for at least 20 minutes to allow flavors to meld.
  • Add the rinsed kidney beans and corn; cook for another 5-10 minutes, or until thoroughly heated.
  • Serve hot with your favorite toppings, such as shredded cheese, sour cream, or fresh cilantro.

Notes

For an extra kick, add a pinch of cayenne pepper with the other spices.
