  • 3-4 medium-sized ripe tomatoes (Roma or beefsteak) finely diced
  • ½ cup fresh basil thinly sliced (chiffonade)
  • 2-3 cloves garlic minced very finely
  • ¼ cup red onion finely minced (optional)
  • 2 tablespoons balsamic glaze the "simple trick"
  • 3 tablespoons extra virgin olive oil good quality
  • Salt & freshly ground black pepper to taste
  • sugar Pinch (optional, if tomatoes are tart)

For Serving

  • Crusty bread or baguette for serving, sliced ½ inch thick and lightly toasted

Preparation

  • Wash and finely dice the tomatoes, then place them in a colander for 10-15 minutes to drain excess liquid.
  • In a medium bowl, gently combine the diced tomatoes, thinly sliced basil, finely minced garlic, and minced red onion (if using).
  • Drizzle in the extra virgin olive oil and the balsamic glaze, which adds concentrated sweetness and body without making the dip watery.
  • Season generously with salt, freshly ground black pepper, and a pinch of sugar if the tomatoes are tart, then gently stir to combine.

Chilling and Serving

  • Cover the bowl and refrigerate for at least 30 minutes, or an hour, to allow the flavors to meld and deepen.
  • While the dip chills, slice crusty bread or a baguette into ½-inch thick pieces and toast until lightly golden and crisp.
  • Stir the bruschetta dip once more before serving with the toasted bread slices on the side.

Notes

Draining the tomatoes is key to a non-watery bruschetta. The balsamic glaze provides a richer flavor and better consistency than traditional balsamic vinegar. Allowing the dip to rest in the refrigerator is crucial for the flavors to meld effectively.
