  • 1 zucchini
  • 1 cup broccoli florets
  • 1/2 cup cherry tomatoes
  • Salt and freshly ground black pepper to taste

Sauce & Seasoning

  • 1/4 cup chicken broth or white wine
  • 1 tbsp soy sauce or tamari for gluten-free
  • 1 tsp fresh thyme, chopped or 1/2 tsp dried
  • 1 tsp fresh rosemary, chopped or 1/2 tsp dried
  • 1 tbsp fresh lemon juice
  • Pinch red pepper flakes optional, for heat

Garnish

  • 2 tbsp grated Parmesan cheese optional, for umami/texture

Cooking Steps

  • Season the cubed chicken generously with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Sear chicken until golden brown and cooked through, then remove and set aside.
  • Add chopped onion to the same skillet and sauté until softened and translucent.
  • Stir in minced garlic, red bell pepper, zucchini, and broccoli. Cook for 5-7 minutes until tender-crisp.
  • Deglaze the pan with chicken broth or white wine, scraping up any browned bits.
  • Stir in soy sauce, thyme, rosemary, and red pepper flakes.
  • Return chicken to the skillet, add cherry tomatoes, and toss to heat through for 1-2 minutes.
  • Remove from heat, stir in lemon juice, and adjust seasoning as needed.
  • Serve immediately, garnished with grated Parmesan cheese if desired.

Notes

For a spicier kick, increase the amount of red pepper flakes. This dish is versatile, feel free to substitute with your favorite vegetables like mushrooms, snap peas, or asparagus. Ensure vegetables are cut into similar sizes for even cooking. The chicken broth or white wine helps to create a flavorful sauce and lift up all the delicious browned bits from the pan.
