  • 1 tablespoon olive oil
  • 1 large yellow onion chopped
  • 2 carrots
  • 2 celery stalks
  • 2 cloves garlic minced
  • 8 cups chicken broth
  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 2 bay leaves
  • 1 cup egg noodles
  • 1/2 cup fresh parsley chopped
  • Salt to taste
  • freshly ground black pepper to taste

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook for 5-7 minutes until softened.
  • Stir in minced garlic and cook for another minute until fragrant.
  • Pour in chicken broth, add chicken, thyme, and bay leaves. Bring to a boil, then simmer covered for 20-25 minutes until chicken is cooked.
  • Remove chicken and shred with two forks; discard bay leaves.
  • Return shredded chicken to the pot. Bring soup back to a boil and add egg noodles; cook for 7-10 minutes according to package directions.
  • Stir in fresh parsley. Season with salt and pepper to taste, then serve hot.

Notes

For extra flavor, use homemade chicken broth. You can also add other vegetables like peas or corn during the last few minutes of cooking. Adjust seasoning to your preference.
