  • 1 pound Ground Turkey (lean)
  • 2 cloves Garlic minced
  • 1 inch Fresh Ginger finely grated
  • 0.5 White Onion chopped
  • 1.5 cups Broccoli Florets
  • 1 Bell Pepper (any color), sliced
  • 0.5 cup Carrots thinly sliced
  • 0.5 cup Snap Peas

Sauce Ingredients

  • 0.25 cup Low-Sodium Soy Sauce
  • 1 tablespoon Rice Vinegar
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Brown Sugar
  • 1 teaspoon Cornstarch
  • 0.5 teaspoon Sriracha (optional)

For Cooking & Serving

  • Neutral Oil for cooking
  • Cooked Rice for serving
  • Toasted Sesame Seeds for garnish
  • Green Onions sliced, for garnish

Instructions
 

Preparation

  • Chop all vegetables, mince the garlic, and grate the ginger as directed. Whisk together soy sauce, rice vinegar, sesame oil, brown sugar, cornstarch, and sriracha until smooth to create the sauce.
  • Heat a large skillet or wok over medium-high heat with a little oil if needed. Cook the ground turkey, breaking it apart, until it's fully browned; then drain any excess grease and transfer it to a separate plate.

Cooking

  • Add a small splash of oil to the same pan, then sauté the chopped onion, minced garlic, and grated ginger for 1-2 minutes until fragrant.
  • Add broccoli, bell pepper, and carrots to the pan; stir-fry for 3-4 minutes until tender-crisp. Add snap peas and stir-fry for an additional 1-2 minutes.
  • Return the cooked ground turkey to the pan with the vegetables. Whisk the sauce again, pour it over the ingredients, and stir to coat everything well.
  • Continue to stir-fry for 1-2 minutes, allowing the sauce to thicken slightly. Remove from heat and serve.

Serving

  • Serve the stir-fry immediately over cooked rice, garnished with toasted sesame seeds and sliced green onions.

Notes

Feel free to customize the vegetables based on what you have on hand or prefer. Bell peppers, mushrooms, or bok choy would also work well. Adjust the sriracha to your heat preference, or omit it for a milder dish.
