Main Ingredients

  • 1 lb Lean Ground Turkey (93% lean or higher)
  • 1 tbsp Olive Oil
  • 1 large Onion diced
  • 2-3 Garlic cloves, minced
  • 1 Bell Pepper (any color), diced
  • 1 can Diced Tomatoes (14.5 oz), undrained

Instructions

Cooking Instructions

  • Heat olive oil in a large skillet over medium-high heat. Add ground turkey, break it up, and cook until browned, then remove it and set aside.
  • Reduce heat to medium. Add diced onion to the skillet and cook until softened and translucent, scraping up any browned bits.
  • Stir in minced garlic and diced bell pepper; cook for 2-3 minutes until they soften and the garlic is fragrant.
  • Return turkey to the skillet, sprinkle with smoked paprika, cumin, and cayenne pepper, then stir and toast spices for 30 seconds.
  • Pour in diced tomatoes, chicken broth, and Worcestershire sauce; bring to a simmer, then cover and cook on low for 10-15 minutes.
  • Uncover, season with salt and pepper, and stir in fresh parsley or cilantro just before serving.

Notes

For extra heat, increase the amount of cayenne pepper. Serve this skillet dish on its own, or with rice, quinoa, or a side salad.
