Ingredients
  

Chicken

  • 1.5 - 2 lbs boneless, skinless chicken breasts or thighs

Vegetables

  • 16 oz frozen corn, thawed
  • 1/4 cup fresh cilantro, plus more for garnish

Sauce

  • 1/2 cup good quality mayonnaise
  • 1/4 cup sour cream or Mexican crema Optional

Spices & Seasonings

  • 2 tablespoons fresh lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder (or 2 cloves minced fresh garlic)
  • 1/2 cup crumbled Cotija cheese, plus more for garnish
  • Salt and Pepper To taste

Preparation

  • Place chicken in the slow cooker and season with salt and pepper.

Make the Sauce

  • Whisk together mayonnaise, sour cream (if using), lime juice, chili powder, smoked paprika, cumin, and garlic powder in a bowl.

Combine and Cook

  • Pour the sauce over the chicken and scatter the corn around it. Cook on LOW for 3-4 hours or HIGH for 2-3 hours until the chicken is tender.

Finish and Serve

  • Shred the cooked chicken, return it to the slow cooker, and stir in Cotija cheese and cilantro until combined and heated through. Serve warm, garnished with extra Cotija, cilantro, and a squeeze of lime.

Notes

For an extra kick, add a pinch of cayenne pepper to the sauce. Adjust the amount of Cotija cheese and cilantro to your liking. This dish is excellent served with warm tortillas, rice, or as a filling for tacos or burritos. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
