  • 2 medium sweet potatoes peeled and diced
  • 2 tbsp maple syrup
  • 1 tbsp olive oil
  • 0.5 cup chopped walnuts
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the diced sweet potatoes, maple syrup, olive oil, salt, and black pepper. Toss until the sweet potatoes are evenly coated.
  • Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet.

Cooking

  • Roast for 15 minutes, then remove the baking sheet from the oven and sprinkle the chopped walnuts over the sweet potatoes.
  • Return to the oven and continue roasting for another 10-15 minutes, or until the sweet potatoes are tender and the walnuts are lightly toasted.

Serving

  • Serve hot as a delicious side dish.

Notes

For an added touch of flavor, you can sprinkle a pinch of cinnamon or nutmeg along with the other spices.
