Dry Ingredients

  • 3 ripe bananas
  • 2 cups rolled oats
  • 1/4 cup honey, maple syrup, or brown sugar
  • 2 large eggs
  • 1/4 cup melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips optional
  • 1/4 cup chopped walnuts optional

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C); line a 9x13 inch baking pan with greased parchment paper.
  • Mash ripe bananas in a large bowl until mostly smooth, with a few small lumps remaining.
  • Add eggs, melted butter or coconut oil, vanilla extract, and sweetener to the mashed bananas, then whisk well.
  • In a separate bowl, whisk together the rolled oats, baking powder, and salt.
  • Combine dry and wet ingredients and stir gently until just mixed; fold in optional chocolate chips or walnuts.
  • Pour the mixture into the prepared pan, spread evenly, and press down firmly.

Baking

  • Bake for 25-35 minutes until edges are golden brown and a toothpick comes out clean.
  • Cool completely in the pan on a wire rack for 1-2 hours before cutting.

Notes

For extra flavor, you can toast the oats lightly before adding them to the mixture. These bars are great for meal prepping and can be stored in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
