  • 2 eggs
  • 1/4 cup fresh spinach chopped
  • 2 tablespoons crumbled feta cheese
  • 1 tablespoon milk dairy or plant-based
  • Salt and pepper to taste
  • 1/2 tablespoon olive oil or butter
  • 1 slice whole-wheat toast

Optional Garnish

  • Cherry tomatoes for garnish

Cooking Steps

  • Heat olive oil or butter in a non-stick pan over medium heat.
  • Add chopped spinach and sauté for 1-2 minutes until it begins to wilt.
  • In a bowl, whisk eggs with milk, salt, and pepper.
  • Pour the egg mixture over the spinach in the pan.
  • As the eggs set, gently push them from the edges to the center, allowing uncooked egg to flow underneath.
  • When the eggs are mostly set but still moist, stir in the crumbled feta cheese and cook for 30 seconds.
  • While eggs are cooking, toast your whole-wheat bread.
  • Serve the scramble on or alongside toast, garnishing with cherry tomatoes if desired.

Notes

Adjust seasoning to taste. For an extra creamy scramble, use a splash of heavy cream instead of milk.
