Dry Ingredients

  • 2 cups rolled oats certified gluten-free if needed
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground ginger

Wet Ingredients

  • 2 large eggs at room temperature
  • 0.5 cup maple syrup or honey/sugar substitute to taste
  • 0.25 cup coconut oil melted
  • 1 tsp vanilla extract

Add-ins

  • 1.5 cups finely grated carrots about 2-3 medium carrots
  • 0.5 cup raisins, chopped walnuts, or shredded coconut Optional

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan, then line it with parchment paper for easy removal.
  • In a food processor, blend the rolled oats until they become a fine flour, being careful not to over-process into a paste.

Mixing

  • In a large bowl, whisk together the ground oats, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.
  • In a separate medium bowl, whisk the eggs, maple syrup, melted coconut oil, and vanilla extract until smooth and fully incorporated.
  • Pour the wet ingredients into the dry ingredients and mix with a spatula until just combined, being careful not to overmix.
  • Gently fold in the finely grated carrots until evenly distributed; add optional raisins, walnuts, or shredded coconut if desired.

Baking and Cooling

  • Pour the batter into the prepared loaf pan, spread evenly, and bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the loaf cool in the pan on a wire rack for at least 15 minutes before carefully transferring it to cool completely on the wire rack; then slice and serve.

Notes

For accurate cooking, ensure your eggs are at room temperature and the coconut oil is fully melted. To prevent over-browning, tent the loaf with foil if needed during baking.
