  • 1 cup cooked, shredded chicken
  • 4 oz softened cream cheese
  • 0.5 packet ranch seasoning
  • 1 tbsp taco seasoning
  • 0.25 cup Rotel (drained)
  • 0.5 cup shredded Monterey Jack cheese
  • 12 small flour tortillas

  • Diced red onion
  • fresh cilantro
  • sour cream

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Cut circles from small flour tortillas using a 2-3 inch cookie cutter, then press each circle into a mini muffin tin to form cups.

Assembly

  • In a medium bowl, combine the cooked chicken, cream cheese, ranch seasoning, taco seasoning, and drained Rotel; mix until thoroughly combined.
  • Spoon the chicken mixture evenly into each tortilla cup and sprinkle shredded Monterey Jack cheese over the top of each cup.

Baking and Serving

  • Bake for 12-15 minutes, or until the tortilla cups are golden brown and the cheese is melted and bubbly.
  • Garnish with diced red onion, fresh cilantro, or sour cream if desired, and serve warm.

Notes

For extra spice, add a pinch of cayenne pepper to the chicken mixture. These cups can be made ahead of time and reheated in the oven for a quick snack or party appetizer.
