Ingredients
  

For the Steak

  • 1 lb flank steak or sirloin
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp lime juice
  • 2-3 minced garlic cloves
  • 1 tbsp olive oil plus more for cooking
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

For the Bowl Base

  • 1 cup cooked brown rice
  • 1/2 cup black beans rinsed
  • 1/4 cup fresh or frozen corn

Optional Toppings

  • 1/4 whole avocado sliced
  • 2 tbsp salsa
  • 1 tbsp plain Greek yogurt or light sour cream
  • 2 tbsp Pico de Gallo
  • 1 tbsp crumbled Cotija cheese

Instructions
 

The Marinade

  • Whisk together lime juice, chopped cilantro, minced garlic, olive oil, cumin, chili powder, salt, and pepper in a bowl.

Marinate the Steak

  • Place the steak in a shallow dish or resealable bag, then pour the marinade over it, ensuring it is evenly coated. Marinate in the refrigerator for at least 30 minutes or up to 4 hours.

Cook the Steak

  • Remove steak from the marinade and pat dry. Heat olive oil in a skillet over medium-high heat, then sear the steak for 3-5 minutes per side until desired doneness.

Rest and Slice Steak

  • Let the cooked steak rest for 5-10 minutes.

Assemble the Bowls

  • Divide cooked brown rice among serving bowls, then top with sliced steak, black beans, corn, and desired toppings.

Serve

  • Garnish with extra cilantro and a lime wedge, then serve immediately.

Notes

For best flavor, marinate the steak for at least 2 hours. Adjust spice levels to your preference by adding more or less chili powder and cumin.
