  • 1.5 lbs Cod Fillets thick-cut, skinless, fresh or thawed
  • 1 can (13.5 oz / 400ml) Full-Fat Coconut Milk
  • 1-2 Lemon for both zest and juice
  • 3-4 cloves Garlic minced
  • 1 inch piece Ginger grated or finely minced
  • 1 Shallot (or small onion) finely diced
  • 1-2 tablespoons Olive Oil
  • Salt To taste
  • Black Pepper To taste
  • Fresh Cilantro or Parsley For garnish, chopped
  • Red pepper flakes a pinch (Optional)

Cooking Steps

  • Pat the cod fillets dry with paper towels, then season generously with salt and black pepper.
  • Heat olive oil in a large skillet over medium heat, then sauté the diced shallot for 2-3 minutes until softened.
  • Add minced garlic and grated ginger, cooking for another minute until fragrant.
  • Pour in the coconut milk, add lemon zest and half a lemon's juice, stir well, and bring to a gentle simmer.
  • Nestle the seasoned cod into the simmering sauce, cover, and cook on low heat for 8-12 minutes until flaky.
  • Taste the sauce and adjust seasoning as needed, then garnish with fresh cilantro or parsley before serving.

Notes

For an extra kick, add a pinch of red pepper flakes with the coconut milk. Serve with a side of rice or steamed vegetables for a complete meal.
