Equipment

  • Large mixing bowl
  • Electric mixer
  • Plastic wrap
  • Measuring spoons
  • Parchment paper

Ingredients

Truffle Base

  • 8 oz (226g) block block cream cheese, softened to room temperature (full-fat recommended)
  • 2 cups (240g) cups powdered sugar, sifted
  • Zest from 2 large oranges
  • 1 teaspoon orange extract optional
  • 1 teaspoon vanilla extract
  • 1 cup (110g) cup graham cracker crumbs, finely crushed

Optional Coatings

  • Extra powdered sugar, melted white chocolate, shredded coconut, finely chopped pistachios, cocoa powder

Instructions

Preparation

  • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy for the truffle base.
  • Gradually add the sifted powdered sugar, mixing until well combined and fluffy, then stir in the orange zest, orange extract (if using), and vanilla extract.
  • Gently fold in the graham cracker crumbs until the mixture is uniform and thick enough to hold its shape.
  • Cover the bowl and refrigerate for at least 1-2 hours until the mixture is firm enough to roll, which is crucial for easy shaping.

Assembly and Serving

  • Once chilled, scoop out small portions (about 1 tablespoon each) and roll them into smooth balls between your palms.
  • Roll each truffle in your chosen coating (e.g., powdered sugar, melted white chocolate, shredded coconut); if using melted chocolate, let them set on parchment paper before serving.
  • Arrange the truffles on a serving plate, and for best results and flavor, keep them chilled until ready to serve.

Notes

For varying textures and flavors, experiment with different coatings beyond the suggested ones. For easier handling, lightly dust your hands with powdered sugar when rolling the truffles. To prevent sticking, keep the truffles chilled and roll them quickly.
