Ingredients
  

Salad

  • 1 lb (450g) cheese tortellini, fresh or frozen
  • 1/2 cup mayonnaise
  • 1/4 cup red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and freshly ground black pepper to taste
  • 1 cup chopped romaine lettuce
  • 1/2 cup chopped red onion
  • 1 Roma tomato, seeded and diced
  • 1/3 cup sliced black olives optional
  • 1/2 cup shredded provolone cheese
  • 4 oz (115g) thinly sliced deli ham, cut into small pieces
  • 4 oz (115g) thinly sliced deli genoa salami, cut into small pieces
  • 4 oz (115g) thinly sliced deli pepperoni, cut into small pieces

For Serving

  • 1/4 cup finely grated Parmesan cheese optional

Instructions
 

Cooking Tortellini

  • Cook tortellini in a large pot of salted boiling water according to package directions until al dente.
  • Drain the tortellini well and rinse with cold water to stop cooking and cool them; set aside.

Prepare Dressing

  • In a large bowl, whisk together mayonnaise, red wine vinegar, Dijon mustard, oregano, garlic powder, salt, and pepper until smooth.
  • Taste and adjust seasonings as needed.

Prepare Ingredients

  • While tortellini cools, chop romaine lettuce, red onion, and dice Roma tomato.
  • Slice black olives if using, and cut deli ham, salami, and pepperoni into small pieces.
  • Shred or chop provolone cheese.

Combine and Chill

  • Add cooled tortellini, prepared vegetables, olives, shredded provolone, ham, salami, and pepperoni to the bowl with the dressing.
  • Gently toss all ingredients until evenly coated with dressing, being careful not to mash the tortellini.
  • Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

Serving

  • Just before serving, give the salad another gentle toss.
  • Optionally, sprinkle with extra finely grated Parmesan cheese.

Notes

For an extra touch of freshness, add some chopped fresh parsley or basil to the salad. You can customize the deli meats based on your preference; turkey or prosciutto would also work well. Make sure to rinse the tortellini thoroughly with cold water to prevent it from sticking together and overcooking.
