Main Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp avocado oil
  • 1 broccoli, cut into small florets head
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 2 garlic, minced cloves
  • 1 fresh ginger, grated inch
  • 1 cup snap peas
  • 2 tbsp toasted sesame seeds for garnish

For the Sauce

  • 1/4 cup low-sodium soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • 1/2 tsp red pepper flakes
  • 2 tbsp water

Instructions
 

Preparation

  • In a small bowl, whisk together the soy sauce, honey, rice vinegar, cornstarch, red pepper flakes, and water until smooth to create the sauce.

Cooking

  • Heat avocado oil in a large wok or skillet over medium-high heat, then cook the shrimp for 1-2 minutes per side until pink and opaque. Remove the shrimp and set aside.
  • If needed, add a small amount of oil to the same pan, then sauté the minced garlic and grated ginger for about 30 seconds until fragrant, being careful not to burn.
  • Add the broccoli florets, sliced bell peppers, and onion to the pan, stir-frying for 3-5 minutes until crisp-tender; add snap peas during the last 2 minutes.
  • Return the cooked shrimp to the pan with the vegetables, re-whisk the prepared sauce, and pour it over everything.
  • Stir continuously for 1-2 minutes until the sauce thickens and coats all ingredients, then remove from heat. Serve immediately, garnished with toasted sesame seeds.

Notes

For extra heat, add more red pepper flakes or a dash of sriracha to the sauce. This stir fry pairs well with rice or noodles.
