  • 1 tbsp fresh ginger, grated
  • 2-3 garlic, minced cloves
  • 1 broccoli florets head, small
  • 1 red bell pepper, thinly sliced
  • 1 cup snap peas
  • 1 large carrot, julienned

Sauce Ingredients

  • 1/4 cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tbsp cornstarch
  • 1/4 cup water or beef broth

  • 1-2 tbsp high-heat cooking oil

  • Whisk together soy sauce, sesame oil, rice vinegar, brown sugar, cornstarch, and water/broth in a small bowl until smooth, then set aside.
  • Heat 1 tablespoon of cooking oil in a wok or skillet over high heat and brown the ground beef for 3-4 minutes, breaking it up and draining any excess grease.
  • Push the beef to one side, add ginger and garlic to the empty side, stir-fry for 30 seconds until fragrant, then mix it into the beef.
  • Add broccoli, carrots, and bell pepper to the pan and stir-fry for 2-3 minutes until crisp-tender; add snap peas during the last minute.
  • Whisk the sauce again, pour it over the beef and vegetables, and stir-fry for 1-2 minutes until everything is evenly coated and the sauce thickens.
  • Remove from heat, garnish with sesame seeds and green onions if desired, and serve hot over rice or noodles.

Notes

For extra spice, add a pinch of red pepper flakes to the sauce. This dish is great for meal prep; simply store in airtight containers for up to 3 days. Adjust vegetable quantities to your preference, and feel free to include other favorites like mushrooms or bok choy. Serve with a side of steamed rice or noodles for a complete meal. Ensure all ingredients are prepped before you start cooking, as stir-frying cooks quickly.
