  • 2 tbsp olive oil
  • 4 garlic minced
  • ½ tsp red pepper flakes optional, for a spicy kick
  • 1 cup fresh spinach
  • lemon juice Juice of ½ lemon
  • Salt and black pepper to taste
  • Fresh parsley chopped (for garnish)

  • Thaw and pat the shrimp dry before seasoning them lightly with salt and black pepper.
  • Heat olive oil in a large skillet over medium-high heat, then add minced garlic and red pepper flakes and sauté for about 30 seconds until fragrant.
  • Add the seasoned shrimp to the pan and cook for 1-2 minutes per side until they turn pink and opaque.
  • Stir in the fresh spinach and cook until just wilted, which takes about 1 minute.
  • Remove the skillet from heat and squeeze fresh lemon juice over the shrimp and spinach.
  • Gently toss everything together, then garnish with fresh chopped parsley and serve immediately.

Notes

For extra flavor, marinate the shrimp in lemon juice and a pinch of garlic powder for 15 minutes before cooking. Adjust the red pepper flakes to your preferred spice level.
