  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 lemon half juiced, half thinly sliced
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.25 tsp salt
  • 0.125 tsp black pepper
  • 1 bunch asparagus trimmed
  • pinch red pepper flakes Optional: for a little kick

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a small bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.

Cooking

  • Pat chicken breasts dry, place on the baking sheet, and coat with half of the lemon-herb mixture.
  • Add trimmed asparagus to the same sheet, drizzle with the remaining mixture, and arrange lemon slices among the chicken and asparagus.
  • Bake for 20-25 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and asparagus is tender-crisp.

Serving

  • Remove from oven, let the chicken rest for 5 minutes, then serve immediately with roasted asparagus.

Notes

For extra flavor, marinate the chicken in the lemon-herb mixture for at least 30 minutes before baking. Ensure chicken is fully cooked to 165°F (74°C) using a meat thermometer to prevent foodborne illness.
