  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1 cup long-grain white rice (like Basmati or Jasmine), rinsed
  • cups low-sodium chicken or vegetable broth
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh lemon juice
  • 1 tbsp fresh parsley chopped
  • 1 tbsp fresh dill chopped
  • 1 tsp lemon zest

Cooking Instructions

  • Heat olive oil in a saucepan, then cook chopped onion until soft; add minced garlic and cook for one minute.
  • Add the rinsed rice to the pan and stir for 1-2 minutes until translucent.
  • Pour in broth, salt, and pepper; bring the mixture to a simmer.
  • Reduce heat to low, cover, and cook for 15 minutes without lifting the lid.
  • Remove from heat and let it rest, covered, for 5-10 minutes to absorb steam and become fluffy.
  • Uncover, fluff the rice with a fork, and stir in lemon juice, parsley, dill, and lemon zest.
  • Taste and adjust seasoning as needed before serving.

Notes

For an extra bright flavor, use freshly squeezed lemon juice. This dish pairs well with grilled chicken or fish.
