  • 1 lb fresh asparagus woody ends snapped off
  • 2 _ boneless, skinless chicken breasts
  • 2 tbsp olive oil divided
  • 1 _ lemon zested and juiced
  • 2 cloves garlic minced
  • 1/2 tsp dried Italian herbs or a mix of dried thyme, oregano, and rosemary
  • Salt and freshly ground black pepper to taste
  • 1/4 cup cherry tomatoes halved (optional, for added color and sweetness)
  • 2 tbsp fresh parsley chopped, for garnish

Preparation

  • Preheat your oven to 400°F (200°C) and prepare the chicken breasts by slicing them horizontally or cubing them.
  • In a bowl, toss the chicken with 1 tbsp olive oil, half the lemon zest and garlic, Italian herbs, salt, and pepper, then set it aside.

Roasting

  • Arrange asparagus on a baking sheet, drizzle with the remaining olive oil, garlic, salt, and pepper, and toss to coat.
  • Place the seasoned chicken and optional cherry tomatoes on the baking sheet alongside the asparagus.
  • Roast for 15-20 minutes until the chicken reaches 165°F (74°C) and asparagus is tender-crisp.

Finishing Touches

  • Once roasted, pour fresh lemon juice over the chicken and asparagus, tossing gently to combine.
  • Garnish with fresh chopped parsley and serve hot for a complete meal.

Notes

For even cooking, ensure chicken pieces are uniform in size. Adjust seasoning to your preference.
