Zesty Lemon-Herb Shrimp and Quinoa Bowl

Ingredients
  

For the Shrimp

  • 1.5 lbs shrimp peeled, deveined, tails on or off, fresh or thawed
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 0.5 tsp dried oregano
  • 0.25 tsp dried thyme
  • Salt and black pepper to taste

For the Bowl

  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 0.5 cup chopped fresh parsley

For the Lemon-Herb Dressing

  • 2 tbsp fresh lemon juice
  • 1 tbsp extra virgin olive oil for dressing
  • red pepper flakes Pinch (optional)
  • Lemon wedges for garnish

Instructions
 

Prepare and Cook the Shrimp

  • If using frozen shrimp, thaw completely and pat dry. Toss shrimp with 1 tablespoon olive oil, garlic powder, oregano, thyme, salt, and pepper.
  • Heat a large skillet over medium-high heat. Cook the seasoned shrimp for 1-2 minutes per side until pink and opaque. Remove and set aside.

Prepare the Bowl Components

  • Ensure your quinoa is cooked and fluffed according to package directions.
  • Wash and chop cherry tomatoes, dice cucumber, and chop fresh parsley.

Make the Dressing and Assemble

  • In a small bowl, whisk together the fresh lemon juice, 1 tablespoon extra virgin olive oil, and a pinch of red pepper flakes (if using).
  • Divide the cooked quinoa among two bowls. Arrange the cooked shrimp, halved cherry tomatoes, and diced cucumber over the quinoa.
  • Drizzle the lemon-herb dressing evenly over each bowl and garnish with chopped fresh parsley and a lemon wedge. Serve immediately.

Notes

For meal prep, you can prepare the shrimp, quinoa, and vegetables ahead of time and store them separately. Assemble the bowls just before serving for the freshest taste. Adjust the amount of red pepper flakes to your preferred spice level. A squeeze of fresh lemon juice at the end can brighten all the flavors.
